Conosciuta anche come Coglioni di Mulo, è un salume tipico prodotto in quantità limitate nel territorio del Comune di Campotosto, in Provincia dell'Aquila e nelle zone limitrofe. La tradizione della Mortadella di Campotosto è molto antica si ritiene, infatti, abbia più di 500 anni.

Oltre alla storia il salume è particolarmente ricercato in quanto viene prodotta ormai da pochissimi artigiani. Nella Mortadella di Campotosto viene utilizzata solo carne sceltissima e magrissima di suino, macinata molto fine. Durante la lavorazione viene inserita in tutta la lunghezza del salume, un cuore di lardo che regala una caratteristica esclusiva al prodotto.
Tra gli ingredienti troviamo inoltre il sale, il pepe nero e vino. L'impasto viene infine fatto maturare per 24 ore. L'insaccatura e la legatura avviene totalmente a mano e nella parte inferiore viene apposto un tralcetto di legno che avvolge lo spago durante l'allentamento dovuto alla stagionatura.
